What is gluten?
Gluten is a vegetable protein which possess incredible culinary characteristics. Amongst other things, it gives volume to bread, elasticity to paste, thus it prevents crumbling. For these wonderful characteristics, you will observe more and more products including wheat gluten directly into their ingredients.
 
Where does it comes from?
This protein can be found in wheat and its derivatives such as kamut and spelt, in rye and its derivatives such as triticale, also it is found in barley and oats and their respective derivatives. Thus we find gluten in rice and corn but their constitution is not toxic for a person with celiac disease.
 
What is the solution?
Upon gluten intolerence, we have to follow a strict gluten free diet. This regime excludes any food containing gluten or that has been in contact with it. We need to exclude wheat and its derivatives such as kamut and spelt, rye and its derivatives such as triticale, we must also exclude barley and oats and their derivatives. We also need to eleminate all possible sources of contamination at home or elswhere, (see "Our tricks" section), which we call crossed contaminations. Note : Inhaling gluten is as toxic as eating gluten for person a with celiac disease.

From our part, we follow a strict gluten free diet, and we invite you to do so yourself. Know that even if you do not have or you have very mild symptoms, effects may appear later in life. We tell ourselves that nothing is worth a healthy life, even if this means to eliminate manu ingredients! Be aware!
